Stuffed Chicken Fillet


Group 1:
- chicken fillets

Group 2:
- chopped up spinach
- bacon
- peppadew
- feta cheese
- half a tsp garlic
- chopped olives
- half a tsp basil paste
- 1 tsp olive oil

Group 3:
- Lemon Juice
- half a glass of white wine (I used sweet)
- Thinly Sliced bacon
- salt and pepper


Step 1:
Preheat the oven to 180 °C.
Take the fillet and make a slit on top, through the middle so that you can stuff the chicken with the ingredients. Remember not to cut through the sides because you want the stuffing to stay inside the chicken and not fall out. Think of it as filling a sock with goodies.

Step 2:
After you have made the slit, add all the ingredients of group 2 together in a bowl and mix well. Now stuff that chicken! Remember that you must do this carefully so that you don't tear the sides.

Step 3:
Take your baking tray and sprinkle a little bit of olive oil on the base so that the chicken doesn't get stuck to it. Place your chicken fillets in a baking tray and  place your bacon strips on top of the chicken like you see in the picture. After you have done this, sprinkle lemon juice (to taste), wine and olive oil. Season it with salt and pepper and a pinch of cayenne pepper.

Leave to cook for about 50 minutes but just check on it every 15 minutes or so.
I served my chicken fillets with a side salad and garlic bread.

You can also use the juice from the pan and pour a little bit over the chicken just before you serve it.
